The Islay Rum Company is a new distillery that has recently started production in January of 2022, we aim to make high quality rum on our traditional pot and twin retort still drawing inspiration form classic rum producing locations such as Jamaica, Barbados and the French West Indies but with a Scottish twist.

Our small team takes pride in experimenting with interesting production methods that we think will become our signature flavour when we grow as a company. From our use of dunder to the promotion of various bacteria in our fermentations, we’re always on the lookout for more ways to create interesting flavours.
