The Islay Rum Distillery based on the Scottish west coast and in production since 2022 creates pure single rum that draws inspiration from some of the most iconic distilleries throughout the world but with a distinct Scottish twist.

With production only commencing at the start of last year we are still relatively young but have been working very hard distilling a varied selection of spirit. Using a combination of 2 types of molasses, multiple yeast strains and implementing techniques such as extended fermentation and wild yeast propagation we have been able to create a selection of spirit used for bottling as unaged white rum, cask specific spirit that has been laid down in some outstanding wood form port pipes to bourbon casks and finally spirit selected for small batch overproof bottlings.
