Rum aficionados now routinely snap up the latest “high ester” rum releases. However, their history, production processes, and scientific understanding are shrouded in misconceptions and half-truths. In this session, hosted by Matt Pietrek, Fannie Thibaud and Robert Gordon, we’ll examine why high-ester rums emerged over a century ago in several locales.
