The Bally House, emblematic in the history of Martinique rum, owes its fame to its old rums, of which Jacques Bally was the forerunner.
The Habitation was one of the first in Martinique to transform cane juice into z’habitants rum, which would later become agricultural rum. To honour this exceptional heritage, we strive daily to respect the development process put in place by Jacques Bally. As such, we select our sugar canes in full maturation in order to produce white rums with rich notes of citrus, pineapple and honey. For their ageing, in line with the original process, we select barrels whose size and charred intensity will bring a unique length and roundness in the mouth. Patience is essential to the creation of balanced, fine and complex old rums, the ultimate legacy of Jacques Bally.
